Since our arrival in Denmark I have looked for recipes to reproduce tastes and treats from the US that we can't get here. I have also tried to find some Danish recipes that are easy and fun and that use the products that are affordable and easy to get here.
SLOPPY JOES - Ok I dare you to try to find a can of Manwich here! Well for UN Day at the Rygaards School I stretched my imagination to come up with two "American" dishes and I went for Sloppy Joes and American Pancakes (can't find them here, or pancake mix either). So here you go . . .
ReplyDelete700-950 G Ground Beef or Ground Pork works fine too
2 Cups Chopped Onions (it seems like a lot but don't worry, it just works)
1 tsp Garlic powder
1/2 tsp onion powder
1 Tbs black pepper
2 1/2 cups ketchup (any ol' cheap kind will do)
salt and vinegar to taste
1 - 1 1/2 cups water
That's it. Brown the beef until the water dissipates and only grease remains. Add onions and cook until they are tranlucent. Add garlic and onion powder, black pepper, ketchup and salt. Mix well and then add water to almost cover the mixture. Cook over medium heat for aboiut 30 minutes but stir it every 5-10 minutes. Add vinegar or more salt to taste, slop it on a hamburger roll and Enjoy!
Forloren Hare (Artificial Rabbit)
ReplyDeleteDon't laugh, it is really good - but it's really just Danish meatloaf using the ground meat they feature here. Try it, you will like it. If it's wrapped in bacon how can you go wrong.
Hare
250 G minced pork
250 G ground beef
breadcrumbs
1 egg
1 1/2 tsp salt
pepper
150 g sliced bacon (Super Brugsen sell a double pack for 14 DKK)
200 ml milk - 2/3 cup or a little less
Sauce
15 G butter
1 1-72 TB flour
pan drippings
cream or milk
CAUTION: DO NOT MAKE THIS IS A GLASS PAN, putting the cold milk in to the hot pan after the first baking can shatter the pan! I promise it happened to me and we are still finding pieces of glass under our tiny little refrigerator.
1) Mix meat, breadcrumbs, egg, salt and pepper. Form the mixture into a rabbit shape.(My kids like to do this), you know pointyish at one end with two legs on the back. Now wrap the whole thing in raw bacon slices. Put into 250 preheated oven for 15 minutes. Add milk and turn heat to 180 and bake for additional 30-40 minutes.
2) Sauce - Melt butter and mix in flour. Add pan drippings. Add milk-dream to desired consistency. Simmer for 5 minutes.

ReplyDeleteFish - white fish/salmon/chicken
2 - 3 medium potatoes
2 - 3 medium onions
oil of choice
salt
pepper
herbs of choice (dill for salmon works great)
500 ml madlavningflodle (food cooking cream)
Knorr Aroma seasoning if you have it
PreHeat oven to 180
Cut thin potato rings/chips
Put cut potatoes in the microwave for 5 minutes to precook them
Cut thin onion rings and put on bottom of baking pan
Sprinkle onions with oil, then salt and pepper and herb to taste
Layer potatoes on top of onion layer and sprinkle with oil, then salt and pepper and herb to taste
(if you have a bigger family you can put another layer of onions then potatoes on top)
Rinse fish and pat dry
Put fish on top of onions and potatoes (I salt the salmon skin with kosher salt before I put it in)
Sprinkle fish with oil, salt and pepper and herb to taste
If you have it mix a 1/2 tsp of Knorr Aroma in Cream and then pour into pan
Graciella tops with grated mozzarella and she sometimes uses Bechemel sauce with bleu cheese instead of cream
Bake for 35 - 40 minutes
DONE!
